After years of watching the restaurant industry sacrifice quality, consistency and profit margin in the mythic world of pre-cooked, pre-processed, "value-added" foods, restaurant equipment innovator Mike Robertson decided to take action.
As the co-founder of Southern Pride, an innovator in restaurant equipment designs, Mike Robertson keeps his finger on the pulse of the industry. His passion for natural, healthy cooking processes constantly inspires his product design. At Southern Pride, Mike and his Dad developed one of the first rotisserie smokers and followed that with many design innovations to make them the best BBQ smokers that money can buy.
"The shift toward pre-cooked, "value added" products began with the best of intentions," he says. "The original intent was to improve consistency, manage labor costs and save money. But with the major consolidation among food processors in our industry, the result is bland, homogenized food products and flavors. Restaurant A's menu tastes just like Restaurant B's menu. And the savings in labor costs - that never quite made it to the bottom line - are nothing compared to the cost of an inferior food product." "After all, if your food doesn't taste great, guests won't come back," Mike says, "and that's the beginning of the end. "
Taking a break from day-to-day operations at Southern Pride, Mike began brainstorming, determined to buck the trend in equipment technology. He began exploring what it would take to empower restaurant owners to get back to the business of serving quality, flavor-rich foods freshly cooked on-site.
"My goal was to transform the delivery of restaurant proteins in a way that gives operators the ability to take control again," he adds, "to put the power back in their hands. To give them an easy, natural method for cooking raw proteins, delivering a more flavorful food they can be proud to serve-all the while adding value to the bottom line." The result is a new brand of technology that dispels the "value added" myth... And that's exactly what he has created with the YieldKing Omni-Chef.
